Antibacterial Activity of Chitosan Acetate on Food-borne Enteropathogenic Bacteria

Antibacterial activity of low molecular weight chitosan acetate (Chitopol A Green, MW 40-50 kD) was examined against food-bone enteropathogens including Eschericia coli, Vibrio vulnificus, Shigella sonnei, Salmonella typhi, and S. enteritidis by measuring the minimum bacterial growth inhibitory concentrations (MICs) and bacterial survival fraction. MICs of chitosan acetate were variable depending upon bacterial species: 0.08% for both E. coli and S. sonnei, 0.04-0.05% for both S. typhi and S. enteritidis, and 0.04% for V. vulnificus. Survival fractions of enteropathogenic bacteria at 0.08 and 0.04% chitosan acetate were investigated. The fraction of survived cells decreased as the concentration of chitosan acetate increased. The data suggest that Chitopol A green might be useful as a natural antibacterial food additive.
